1. Choose the right temperature
Caviar should always be served well chilled, between 4 and 6°C. Take it out of the refrigerator only a few minutes before serving, ideally presenting it over a bed of ice to keep it cold throughout the tasting.
2. Use the right utensils
Never serve caviar with a metal spoon: it alters its delicate flavor by oxidizing the pearls. Choose a mother-of-pearl, horn, or wooden spoon instead, traditionally used by the great caviar houses.

5. Which drink to choose?
Non-vintage brut champagne or well-chilled vodka are the classic pairings. Wine lovers will also find that a Chablis or a blanc de blancs champagne pairs beautifully with caviar.
